Our Speaker: Shaelyn Xu
Bio: Shaelyn Xu is a Ph.D. candidate under the supervision of Dr. Michael Gänzle in the Department of Agricultural, Food, and Nutritional Science at the University of Albert. Her Ph.D. dissertation focuses on investigating microbial ecology and biofilm formation in meat processing facilities, aiming to develop novel interventions for control of spoilage microorganisms. Since 2022, she has collaborated with a meat processing facility to characterize microbes in the facility, subtype microbial transmission and persistence patterns using next-generation sequencing technology. She is passionate about bridging the gap between academia and industry to enhance food safety practices. Looking forward, Shaelyn aims to secure an academic position where she can continue to support food companies to reduce the risk of cross-contamination and train the new generation of students on the importance of food safety and quality.
