Innovation of cereal plant-based milk alternatives using enzyme technology
Plant, cereal and nut-based milks now make up 10 percent of the overall milk market as consumers look to improve their health & wellness, explore novel flavours and prioritize sustainability and animal welfare. When it comes to formulating new plant-based milk alternatives, process optimization is key to delivering a product that has the organoleptic properties consumers crave while supporting improved nutrition and sustainable manufacturing.
