Using sanitation to help manage food safety risks
Presented by the The Alberta Association for Food Protection.
Dr. Petran’s presentation will explore the key role that effective sanitation plays in food safety risk management, and that this is a universal concept, regardless of which regulatory requirements a company is under. Topics to be covered include: links between sanitation and foodborne illnesses, sanitation strategies, where sanitation fits in regulatory schema and examples of where sanitation lapses have led to significant issues. Attendees will gain a stronger appreciation for the importance of properly implemented sanitation programs in assuring public health. Since this is part of an Affiliate meeting, the talk will also include an overview of and benefits to being part of the International Association for Food Protection.
