Canadian fruit and vegetable by-products available for use in food product and ingredient manufacturing: An opportunity for upcycling, cost-cutting and sustainability
In 2022, Vineland published a report on fruit and vegetable by-product streams available in Canada for repurposing within the food industry. The presentation will discuss the large volumes of material available, locations of availability and quality of the material. Further, considerations for accessing and using the material and potential functionality of components within these by-product streams, including some findings from Vineland’s in-house research, will also be presented.

Bio:
Alexandra Grygorczyk is a Research Scientist at Vineland Research and Innovation Centre. In her ten years at Vineland, she has been leading diverse grant funded research projects and providing contract services to support the food and horticulture industries. Her areas of research include investigating opportunities for utilization of horticulture by-product streams, developing new instrumental methods for predicting sensory properties of produce, and examining the drivers of consumer preferences for fruits, vegetables, ornamental plants and related products.
Alexandra obtained her undergraduate and master’s degrees in Food Science at McGill University and her PhD at the University of Guelph.
